My family has baby fever this year! My sister just had her baby and I will be having baby # 4 out of my cousins in December. It’s been amazing because as each bundle of joy arrives; I am reminded of newborn life with Viv! I just made these lactation cookies for my sister. I ate them all the time while nursing and I like to think they did the trick. Bon appétit!

To Make Dairy Free: Substitute Butter for Earth Balance Vegan Butter (2 of their Sticks) and Substitute Chocolate Chips with Nestle’s Simply Delicious Chocolate Morsels (made with 3 Ingredients- free from 8 major food allergies)
Oatmeal Chocolate Chip Lactation Cookies
Ingredients
- 2 tablespoons flax seed meal (or finely ground flax seed)
- 1/4 cup water
- 2 sticks butter, softened
- 1 cup white sugar
- 1/2 cup brown sugar
- 3 egg yolks
- 1 1/2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 1/4 cup brewers’ yeast
- 1 tablespoon wheat germ
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cream of tartar
- 2 1/2 cups old-fashioned oats
- 1 cup chocolate chips (I use dark chocolate chips)
Directions
- Preheat oven to 350 degrees
- Mix flaxseed with water in small bowl and soak for 5 minutes
- Beat butter, white sugar, and brown sugar together in a large mixing bowl until creamy. Add egg yolks and vanilla extract; beat to incorporate. Stir in flax seed mixture
- Mix flour, brewer’s yeast, wheat germ, baking soda, salt, and cream of tartar in a separate bowl; add to butter mixture and stir until combined. Fold oats and chocolate chips into dough (I use my hands)
- Roll dough into walnut-sized balls and place 2 inches apart onto a baking sheet
- Bake for 10 to 12 minutes; so you slightly browned edges/ bottoms. Allow the cookies to cool on the baking sheet for 1 minute before removing to a cooling rack
