First time but these came out pretty damn good! It’s raining/snowing and I am stuck indoors with an energetic 3 year old and a 3.5 month year old 🙂 After several episodes of Butter Bean Cafe; my little one has become a pro helper in the kitchen…..Lets Get Cookin!
Ingredients
- 1 1/2 cups all purpose flour (if using Kamut Flour use 1 1/4 cups)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 mashed ripe bananas
- 2 large eggs
- 1 stick salted butter, melted
- 1/4 cup milk
- 3/4 cup dark chocolate chips
Directions
- Preheat oven to 350°F and line muffin tray with liners
- Mix flour, sugar(s), baking powder and salt in a large bowl
- Mix mashed bananas, eggs, melted butter and milk in a medium bowl
- Add banana mixture into the dry ingredients; stir until blended
- Stir in chocolate chips
- Divide batter among prepared muffin liners, filling each about 3/4 full
- Bake for 25-30mins or until tops are golden brown
